...1 1.1 CAKES AND PASTRIES Introduction Bakery products have become very popular throughout the country. Breads and biscuits are the most common products but other items like cakes, pastries, cream-rolls, cookies etc. are also not lagging far behind. These items are consumed by people of all age groups across the board. Nature of these products is such that the consumers prefer fresh items. Shelf life of cakes & pastries is limited and thus local manufacturers enjoy distinct advantage. In spite of continuous increase in the consumption of these items during last few years, the per capita consumption is still very low compared to the advanced countries. There is, thus, good scope for these items. A good pastry is light and airy, easily broken in the mouth (what is called 'short' eating), but firm enough to support the weight of the filling. The dough must be well mixed but care must be taken not to overmix the pastry. This results in long gluten strands and toughens the pastry. Thus, the manufacture of good pastry is something of a fine art. 1.2 Objective The primary objective of the model report is to facilitate the entrepreneurs in understanding the importance of setting up unit of cakes and pastries. This model report will serve as guidance to the entrepreneurs on starting up such a new project and basic technical knowledge for setting up such a facility. 1.3 Raw Material Availability The all important raw materials will be wheat flour, sugar, eggs and ghee for......

The Cup

...Lloyd Williams Geoffrey Agnor 7/12/14 Humanities The Cup Khyentse Norbu’s “The Cup” (Comedy, 1999) the World Cup is being held in France while two young refugees arrive at a monastery in India. While the setting and feel of the monastery would usually be serene and peaceful, it is disrupted by the excitement and hype about the world cup. The main anticipator of the World Cup is a young and mischievous student named Orgyen. Orgyen nows that the World Cup is very important to him, as do many other young boys in the monastery, and he will do anything it takes to be able to watch as much of the games as he can. As this occurs, the head of the monastery contemplates on the changes of the world and how this greatly is affecting the young boys in the monastery. Although technology and tradition and this undying difference, they can ultimately come together and create something great for both the students and the Abbot. The students, particularly Orgyen, idolize soccer and the World Cup. The fascination and wonders of other cultures bring them into a deeper love for the sport and the thrill that comes with the World Cup. These students are willing to do almost anything to be able to experience the World Cup, especially Orgyen. He goes over the line, bringing other students along, and sneaks out to watch one of the games at a place they paid money for. However, the Geko and Abbot are not at all concerned with this idea of soccer and other cultures. They only wish that the......

Orange Cake

...Orange Cake Ingredients 1 1/2 cups all-purpose flour (180gm) 1 tsp. baking powder 1/2 tsp. salt 1 pinch of salt (for whipping egg whites) 1/2 cup butter/margarine, at room temperature (112gm) 3/4 cup sugar, grinded (150gm) 2 large eggs (or 3 small ones), at room temperature juice from 1 orange (one third of a cup) zest from 1 orange (about 1 tbsp.) 1 tsp. vanilla essence Simple Orange Glaze Ingredients 1 cup icing sugar 1/4 tsp. orange zest (optional) 4-5 tbsp. freshly squeezed orange juice Instructions  First, separate the yolks from the egg whites. Set aside in different bowls. Grate the zest off the orange using a zester or the fine plane of your grater. Take care to ONLY grate the orange, not the white part (pith). The white part is very bitter and will change the taste of your cake, so keep turning the orange as you zest it. Preheat the oven to 170C. Grease and line an 8" round pan. Beat the butter and sugar until light and creamy. Add the egg yolks one at a time, beating well after each addition. Next add the orange juice, vanilla essence and orange zest and beat. Add the flour and beat it in. Set aside. Wash the whisk attachments and dry them well. In a separate bowl, whisk the egg whites until frothy, then add a pinch of salt to them and keep beating until the egg whites form stiff peaks. The salt helps to stabilize the egg whites. Add a third of the egg whites into the cake batter and stir it in with a spatula or wooden......

Sift Bakery

...ASSIGNMENT QUESTIONS 1. What are the dominant economic characteristics of the specialty baking market? A reaction against organic/healthful foods according to reports, an increase in specialty foods, small size means portion control; consumers are in the higher income and spending brackets. A little in moderation is the key. However, my cardiologist would say, “If it takes good, spit it out.” Does it appear that the industry’s prospects for growth and attractive profits are good? Even though all other categories of bakery products recently saw a decline, I believe SCDB and the cupcake industry will succeed in a niche market or we probably wouldn’t be studying them. 2. How strong are the competitive forces confronting Sift and other specialty bakers? Very. Grocery and big box along with in store bakeries, other high end bakeries, high unemployment and a mending sputtering economy are all contributing factors. Which one of the five competitive forces is the strongest? The threat of new entry is high. New competitors can come into the industry easily, reducing profits. I think the biggest obstacle was their business plan. A five-force analysis to support the answer: 1. The parties involved are consumers, competitors and the business itself. Rivalry, cheaper products, and market saturation are all factors that bring about competitive pressures. The market saturation in the cupcake business isn’t tremendous. It does however have social circumstances that could become an......

...would best fit Sift's internal and external situation. The company is looking to expand and rebrand its business to generate more profit. Through this business plan, Sift would potentially receive approximately 1.3 million dollars for their net income in 2013. By having one central baking location and more storefront locations. The idea is that Sift would sell a larger amount of their product each year than they currently are because they would increase their number of customers through their multiple retail locations. Another advantage of building a commissary that provided all the baked goods for the storefront locations Another advantage of building a commissary that provided all the baked goods for the storefront locations would be the cut in capital costs. Each location would not make their own specialty baked good products which would cut down the expensive costs of large baking equipment for each location. Rent expense would also be cheaper because less equipment would mean less space necessary to run the business. Rental space would only need to be big enough to decorate and display the cupcakes. Capital costs would be reduced due to this option. A concern that might arise from this option could have an affect on the operational style of the business due to a lack of communication between employees. Sift has already begun to have an issue with "chain of command effective communication about processes" within their three store locations. (Page 307) With the addition......
