DEFINING THE FIVE MOTHER SAUCES
Béchamel, the classic white sauce, was named after its inventor, Louis XIV's steward Louis de Béchamel. The king of all sauces, it is often referred to as a cream sauce because of its appearance and is probably used most frequently in all types of dishes.
Velouté is a stock-based white sauce. It can be made from chicken, veal or fish stock. Enrichments such as egg yolks or cream are sometimes also added.
Espagnole, or brown sauce, is traditionally made of a rich meat stock, a mirepoix of browned vegetables (most often a mixture of diced onion, carrots and celery), a nicely browned roux, herbs and sometimes tomato paste.
Hollandaise and Mayonnaise are two sauces that are made with an emulsion of egg yolks and fat. Hollandaise is made with butter, egg yolks and lemon juice, usually in a double boiler to prevent overheating, and served warm. It is generally used to embellish vegetables, fish and egg dishes, such as the classic Eggs Benedict. Mayonnaise is a thick, creamy dressing that's an emulsion of vegetable oil, egg yolks, lemon juice or vinegar and seasonings. It is widely used as a spread, a dressing and as a sauce. It's also used as the base for such mixtures as Tartar Sauce, Thousand Island Dressing, Aïoli, and Remoulade.
Tomatoe Sauce
5 MOTHER SAUCES RECIPES 1. Béchamel- made by thickening hot milk with a simple white roux. The sauce is then flavored with onion, cloves and nutmeg and simmered until it is creamy and velvety smooth. 2. Velouté- made by thickening white stock with roux and then simmering it for a while. chicken velouté fortified with cream becomes the Suprême Sauce. Veal velouté thickened with a liaison of egg yolks and cream becomes the Allemende Sauce. And the fish velouté plus white wine and heavy cream becomes the White Wine Sauce. 3. Espagnole- made by thickening brown stock with roux. espagnole is made with tomato purée and mirepoix for deeper color and flavor. Moreover, brown stock itself is made from bones that have first been roasted to add color and flavor. 4. Hollandaise -a liquid and a thickening agent, plus flavorings. Hollandaise is a tangy, buttery sauce made by slowly whisking clarified butter into warm egg yolks. 5. Tomatoe sauce- first we render salt pork and then sauté aromatic vegetables. Then we add tomatoes, stock and a ham bone, and simmer it in the oven for a couple of hours. Cooking the sauce in the oven helps heat it evenly and without scorching.

Béchamel
The Béchamel sauce is also reffered to as a basic white sauce. This sauce is great for making cheese based sauces. This sauce is very easy to make and is the absolute best for making a great Mac & Cheese. Here's the general idea on how to make this sauce. I will not give exact measurements so that you may adjust it to the amount you see fit. 1. In sauce pan add milk and and onion cloute 2. Allow milk and onion to simmer 3. While milk simmers. begin to make a light or blanc roux ***Important*** Remember it is easier to thin a sauce than to thicken so it is ok if you make too much roux. 4. Remove milk from the heat and remove the onion from the milk. 5. Begin to temper milk into roux wile wisking briskly. 6. Bring sauce to a boil than a simmer 7. Season with white pepper and salt to taste.
Velouté
The Velouté sauce is a white sauce using stock and is great sauce for meat. This is very easy to make. The key is when using this sauce you want to pair it with the same meat as the stock you are using.So remember beef with beef, chicken with chicken and fish with fish. 1. Make your roux 2. Slowly add your stock while whisking briskly. 3. Bring to a boil. 4. Simmer 5. Salt and pepper to taste.
Espagnole
The Espagnole sauce is a brown sauce. This sauce is widely used in cajun/creole cooking. 1. Make a nice brown roux. 2. In a sauce pan brown your mirepoix with tomato sauce 3. Once mirepoix is nice and brown you will add you stock 4. Add stock to roux while whisking briskly 5. Add Sachet d'epices:* 3 or 4 parsley stems, chopped * 1/2 teaspoon thyme leaves * 1 bay leaf * 1/2 teaspoon cracked black peppercorns * 1 clove garlic, crushed * The above ingredients are placed into a 4" square of cheesecloth and tied into a sack. 6. Hollandaise
Hollandaise is a sauce made with an emulsion of egg yolks and fat.It is generally used with vegetables, fish and egg dishes, such as the classic Eggs Benedict.
Ingrediants
4 egg yolks
1 tablespoon fresh lemon juice
1/2 cup unsalted butter, melted and cooled to room temperature
Salt
1. Vigorously whisk, the egg yolks and lemon juice together in a stainless steel bowl until the mixture is thickened. 2. Place the bowl over a saucepan or barely simmering water. Whisk rapidly, be careful not to let the mixture get too hot or the eggs will scramble. 3. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. ***IMPORTANT*** do not add butter to rapidly or you will ruin the sauce and have to start over. 4. Remove from heat and season to taste with salt. 5. Serve warm.
Tomato
The Tomato sauce isa great sauce to make in large volume. It freezes well and can be used on various dishes

4 minced garlic cloves
3-ounces extra-virgin olive oil
2 teaspoons dried, crushed thyme or use fresh (double up if your using fresh)

The novel uses real places, like fort William Henry, to add validity to the story that takes place in 1757 during the French and Indian War. ...The short story “The Last Leaf” portraits two young women named Sue and Johnsy living together in New York. Pneumonia has hit the area they are living in and Johnsy, not being used to the climate - as she is from California, is suffering from the disease. Sue takes on the role as the caretaker of Johnsy. Because Johnsy is terminally ill, she is therefore in need of medical help. The unnamed doctor, who is called in to Johnsys aid, is portrayed as a presumptuous and nonchalant man. He seems presumptuous by stating that he could increase Johnsys survival-prognosis if Sue got her “to ask one question about the new winter styles in cloak sleeves”; implying that by being a woman you automatically have an interest in fashion. The fact that he also declare that Johnsy should think about finding herself a man, simply underlines my point further: For all he knew Johnsy could be a lesbian. It is not apparent that she is though, however there are innuendos throughout the story which could suggest that Sue and Johnsy are more than just roommates. ...The Last Emperor: Truth and Misleading In 1987, a film came into theaters across the globe about China’s last emperor. The Last Emperor, directed by Bernardo Bertolucci, shows the life of Pu-Yi from when he enters the Forbidden City at age three to become emperor of China, to his final days as a reformed man. The film, although it showed how China was during the Qing Dynasty in a fairly honest light, also had its downfalls. Many problems plagues the last years of the Qing Dynasty, such as the Republic Revolutions, opium, warlords, and the confusing relationship with Japan and it’s government during this time. These issues were either not touched on or barely noticeable during the almost three hour long film. The story of Pu Yi, China’s last emperor, starts with him being taken to the Forbidden City at the age of three. The Dowager Empress “arranged once more for a boy emperor.” (Morton, 174) Pu Yi would not stay emperor long, as he would lose that title in 1912 because of the Republican Revolution. Formed by Sun Yat-Sen, it was a revolution against imperial rule. This revolution was also largely a military revolt and the beginnings of a fast changing government. In the film this Revolution seemed to hardly happen. Although the young emperor was being protected from the outside world, it would have made the film more historically clear if this event was explained more in depth.
